Our fresh collard greens are from the Coastal Georgia Small Farmers Cooperative. This small group of minority farmers works together as a unified operation to enhance and sustain the heritage of the small African American farmer in Georgia. They were established in 1998 and have been operating and expanding since the fall of 1999. The co-op currently has about 55 acres of prime farm land and farmers with over twenty years of experience in providing fresh farm produce to local markets.
Collard greens are a staple vegetable in southern cuisine and soul food. These greens are known for their thick, slightly bitter, edible leaves. They are available year round but they are tastier and more nutritious in cold months.
Collards are a good source of vitamin c and soluble fiber and contain multiple nutrients with potent anti-cancer properties.
