Recipe: Cauliflower Soup

Today, we had a visit from Mr. Bang and Ms. Miranda, Food Corps Service Members working with the Captain Planet Foundation. They taught us how to make cauliflower soup!

First, we diced one whole onion. We used our handy (and safe) hand-powered food chopper but at home, you could simply use a knife (with adult supervision, of course).

Then we separated our cauliflower into bite-size pieces – we practiced with our wavy cutters and with our nylon knives (the “claw and saw” technique) but tearing apart with your hands works just fine.

We heated some oil in our pan, then added the onions. The cooked for a few minutes until they were translucent (and started smelling really good)! Then we added the cauliflower.

We stirred so nothing burned and added a little salt and pepper for taste.

Finally, we blended the cauliflower with water to make a cauliflower soup. The kids agreed that it was delicious!
